Quick Vegan Berry Pie

On top of this easy-to-make, fresh pie you can use any berries available, slices of sour apples or even diced rhubarb and strawberries. If the pie does not have to be vegan, you can replace the soy yogurt with buttermilk. You can even add an egg into the dough. With this recipe, you can make a pie the size of a baking tray.


Ingredients


4,5 dl soy yogurt (or buttermilk)

4,5 dl sugar (a little less is fine, too)

6 dl wheat flour

1 tsp baking soda

100 g melted vegetable margarine (or butter)

2 tblsp lemon juice

(1 egg, not necessary)


On top of the pie


sliced sour apples, sugar and cinnamon

OR

diced rhubarb and strawberries

OR

blueberries with some lingonberries


Mix the ingredients with a wooden fork in a large bowl. Spread the dough onto a baking tray covered with baking paper. Top the pie with thin slices of sour apples and a pinch of cinnamon and sugar, or with chopped rhubarb and strawberries, or with blueberries strengthened by some lingonberries.


Bake on the middle level of the oven, in 175 degrees of Celsius for about 20 minutes.
